  1. Salt, pepper and garlic powder the chicken. Chop the garlic coarsely. put the olive oil in the bottom of a lasagne pan. Rub the chicken pieces in the garlic and remove them again. Chop all the vegetables in large pieces and throw them in on top of the garlic and oil. Lay the chicken breasts and thighs on top of the vegetables (two skinned, boned chicken breast halves and 4 whole chicken thighs with skin and bone). Pour the tomato sauce over the whole thing, then sprinkle the soy sauce over all. Bake at 350 degrees F for 1 1/2 hours. If it's getting dry put aluminum foil over it. If too wet, raise the heat towards the end to brown the top.
  2. Serve with rice.
