Delish Homemade Spinach Noodles

Ingredients:

  • 8 oz spinach
  • 2 eggs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 2 cups flour

Directions:

  1. Wash spinach and rinse.
  2. Cover and cook spinach on medium heat with just the water that clings to the leaves. (add only a little bit more if needed) 3 to 10 minutes.
  3. Meanwhile, crack eggs into blender. Add salt and olive oil. Also get a large bowl and put the flour in it. Make a well in the middle of the flour.
  4. Take spinach of heat and immediately place in the blender with the egg, salt, and olive oil.
  5. Cover and blend until smooth, about 20 seconds.
  6. Pour spinach mixture into the well in the flour; mix throughly. Add as little water or flour as it needs.
  7. Take out and place on a lightly floured surface and knead until smooth and elastic - about 5 minutes.
  8. Let dough stand 10 minutes.
  9. Divide dough in half. Put dough on a large floured cloth (surface works as well, it is just easier to manage with cloth) and roll out until paper thin. Put a light layer of flour over the top.
  10. Roll the dough lengthwise.
  11. Cut 18 to 14 of an inch slices, then roll them out to their full length, and set them in a warm place to dry.
  12. Let them sit at least 45 minutes before cooking.
