  2. 2. Roll into ping-pong sized balls.
  3. 3. Place balls on baking sheet lined with parchment paper and slightly flatten.
  4. 4. Bake for 20 minutes at 375°F.
  5. 5. Broil for a few minutes to make outsides crunchy.
  6. 6. Serve on warm pita with chopped tomatoes, red onion, scallions, lettuce, cucumber, pepper, and tzatiki
  7. 7. To make your own simple tzatiki, mix grated cucumber (peeled and seeded), salt, garlic, chives, lemon juice, and plain low-fat yogurt!
