Ingredients:

  • 1/3 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 3/4 cup buttermilk ( 3/4 cup soy milk minus 1 tsp-repl ace that tsp with a tsp vinegar for vegan).
  • 2 cups flour
  • 1/2 tsp soda
  • 1/2 tsp powder
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 350º. Grease bottom of loaf pan.
  2. Cream butter and sugar in medium bowl.
  3. Beat in eggs and blend in buttermilk.
  4. Stir in remaining ingredients til dry ingredients are moistened.
  5. Pour into pan and bake at 350º for 50-55 mins or til toothpick inserted near center comes out clean.
  6. Cool 10 mins in pan, remove.
