Dad's to Die for Cheesecake

Ingredients:

  • 3 tbsp sugar
  • 3/4 cup melted butter
  • 1 cup sugar
  • 3 large eggs
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 2 cups sour cream

Directions:

  1. Preheat oven to 350.
  2. Mix graham crackers, sugar and butter into large mixing bowl.
  3. Pack crust into spring form pan. Bake for 10 minutes.
  4. In a large mixing bowl, beat the cream cheese & sugar until very smooth (3 minutes).
  5. Add eggs, one at a time; beating after each addition until smooth. Be sure to scrape the sides of the bowl.
  6. Add lemon juice, vanilla, and salt. Beat until incorporated.
  7. Mix in sour cream until just blended. Pour batter into crust.
  8. Place a 9x13 pan with an inch of VERY hot water on the bottom shelf of the oven. Place cheesecake pan on the rack just above the water pan.
  9. Bake for 45 minutes. Turn off oven without opening the door. Let the cake cool for an hour.
  10. Remove cake from the oven and allow to cool on a rack until room temperature, about an hour.
  11. Cover with plastic wrap and refrigerate overnight.
