Curry Chickpeas With Tofu

Ingredients:

Directions:

  1. Heat skillet with 1 tbsp oil and add finely chopped onion.
  2. Fry at medium heat until tender.
  3. Add finely chopped onion and garlic cloves and fry until the onion starts to brown.
  4. Add tofu to heat through and add spices. Brown for a few minutes
  5. Add 1 1/2 cups water and 1 can of drained chickpeas.
  6. Bring to a boil.
  7. Once at boil, reduce heat, cover pot, and simmer for 10 minutes.
  8. Add yogurt and simmer, stirring constantly for 5 minutes.
  9. Served over rice sprinkled with cilantros.
