Curried Potato Hash Browns

Ingredients:

  • 2 large russet potatoes shredded in a food processer
  • 1 clove of garlic minced
  • 1 tsp of sea salt
  • 1 tsp of curry powder
  • 1- tsp chili powder
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon
  • measurements are approximate

Directions:

  1. Heat a griddle on high add, the olive oil and the red onions cook for a few minutes then add the garlic and the shredded potatoes.
  2. Sprinkle the herbs and spices evenly over the potatoes.
  3. Squeeze the juice of 1 lemon over potatoes.
  4. Continue to fry the potatoes for about ten minutes, or until browned and crisp.
  5. Turn them over and brown on other side.
  6. Place onto a plate and garnish with a few fresh parsley leaves
