Cucumber and Onion Salad

Ingredients:

Directions:

  1. In a large bowl, whisk together 2 tbsp canola oil, 1 tbsp rice or balsamic vinegar, 1-2 tsp salt, 1 tsp black pepper and 1/4 tsp crushed red pepper.
  2. Slice and cut cucumber into thin slices.
  3. Chop onion into 1/2 inch pieces (smaller if you wish).
  4. Thinly slice scallions crosswise.
  5. Add cucumber, onion and scallion to wet mixture.
  6. Serve immediately or chill; covered in refrigerator for serving later.
