Crunch Fried Green Tomatoes

Ingredients:

  • 4 medium green tomatoes
  • 1/2 cup flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 large egg
  • 1 tbsp milk
  • 1/4 cup vegetable oil

Directions:

  1. Cut tomatoes in 1/2 inch slices.
  2. In shallow dish beat together flour, salt, sugar, and cayenne.
  3. In another shallow dish mix together egg and milk.
  4. Put the crushed corn flakes in a third shallow dish.
  5. Dredge tomato slice in flour mixture, shake off excess,.
  6. Dip into egg mixture, let excess drip off;.
  7. Coat with cornflakes pressing tomato to adhere.
  8. Arrange slices in one layer on baking sheet.
  9. In large non stick skillet heat 1 TBL butter and 1 TBL oil over medium heat til foaming subsides.
  10. Fry 3-4 slices at a time, (about 3 minutes each side.) til golden brown.
  11. Adding butter and oil as needed.
