Crockpot Shrimp and Kidney Bean Gumbo

Ingredients:

Directions:

  1. Weight of shrimp is estimated. I used 2 lbs of shrimp weighed with shells. Didn't weigh shells after removing!
  2. In a large pot cover 2 cups of raw kidney beans with at least 2 inches of water.
  3. Bring to a boil and continue boiling for 2 minutes.
  4. Cover and remove from heat.
  5. Let sit at least 1 hour covered.
  6. Combine l 28 oz can of crushed tomatoes with diced celery, sliced yellow zucchini, quartered mushrooms, chopped onion, corn, diced green pepper, and carrots in 6 qt crockpot.
  7. Add in soaked kidney beans.
  8. Add in 2 cups water.
  9. Season with Old Bay, garlic, black pepper, sea salt to taste.
  10. Stir thoroughly.
  11. Cook on high 5 hours.
  12. Add in shrimp and cook additional 30 min.
