Crispy Oven-Fried Catfish

Ingredients:

Directions:

  1. Preheat oven to 400°F.
  2. Spray a baking sheet with vegetable oil cooking spray.
  3. Sprinkle fish on both sides with Cajun seasoning.
  4. In a small mixing bowl, combine egg substitute and skim milk.
  5. Place cornflake crumbs on a plate.
  6. One at a time, dip catfish fillets into egg mixture, then roll in cornflake crumbs.
  7. Dip and roll fillets again.
  8. Place on baking sheet.
  9. Place baking sheet on oven's bottom shelf.
  10. Bake at 400°F for 20 minutes.
  11. Reduce heat to 350°F and bake for 5 more minutes or until crust is golden and fish flakes easily.
