Light Mint Chocolate Chip Ice Cream

Ingredients:

  • 1 cup skim milk
  • 4 oz pastuerized egg substitute (egg beaters)
  • 1/2-1 tsp peppermint extract

Directions:

  1. Stir together egg substitute, sugar, and mint extract and combine well.
  2. Add half-n-half and milk and stir until incorporated.
  3. Chill for at least 30 minutes.
  4. Pour chilled liquid into your ice cream maker.
  5. Five minutes before freezing is complete, add the chocolate chips.
  6. Enjoy!
  7. Note: Be careful of the mint extract; some are stronger than others (start at smallest amount and taste before freezing).
