Creamy Spinach and Ham

Ingredients:

  • 2 slices bread
  • 2 tbsp soft cheese
  • 1 pinch nutmeg
  • 1 slice ham

Directions:

  1. Brush the sandwich toaster with a little sunflower oil, wiping off the excess with kitchen paper. Preheat the sandwich toaster to its highest setting.
  2. Pick over the spinach leaves removing any tough stalks. Wash well in a colander. Heat a pan and add the damp spinach, stirring until it just begins to wilt. Remove from the pan and set aside.
  3. Spread the Quark on one side of each slice of bread. On one slice, cover the Quark with the wilted spinach. Sprinkle with a pinch of nutmeg (if using) and cover with the ham. Top the sandwich with the second slice of bread (Quark side down) and place in the toaster. Close the lid and cook for 3 minutes until browned.
