Ingredients:

Directions:

  1. Prepare 6 servings instant mashed potatoes using package directions, omitting the butter.
  2. Add one 4-ounce carton whipped cream cheese; beat well.
  3. Stir in 1 beaten egg, 2 tablespoons finely chopped green onion, and 1 tablespoon finely snipped parsley; blend well.
  4. Transfer to a well-greased 1-quart baking dish.
  5. Dot with 1 tablespoon butter.
  6. Sprinkle with paprika.
  7. Bake at 400 for 30 minutes.
  8. Serves 6.
