Creamed Spinach with Bacon & Onions

Ingredients:

Directions:

  1. Render the bacon in a dutch oven over moderately low heat until crisp.
  2. Add the onion and saute until softened.
  3. Add the spinach and cook, turning and stirring, until just wilted.
  4. Season with salt and pepper.
  5. Drain the excess liquid into a skillet.
  6. Add the cream to the skillet, bring to a boil and reduce by half.
  7. Season with nutmeg.
  8. Pour over the spinach.
