Cream of Potato Soup Au Gratin

Ingredients:

Directions:

  1. Peel and chop onion.
  2. Peel and dice potatoes.
  3. Melt butter in a saucepan.
  4. Saute onion in butter until soft.
  5. Add potatoes to the pan with the onions and stir.
  6. Add chile, chicken stock, salt, celery salt and pepper.
  7. Cook for 20 minutes or until the potatoes are tender.
  8. Let cool for 10- 15 minutes.
  9. Place the potato mixture into a blender and puree until smooth.
  10. Return puree mixture to the pan.
  11. Add milk and cream and heat through.
  12. When ready to serve, Pour into individual flame-proof bowls.
  13. Top with grated cheddar cheese.
  14. Dust with the parmesan cheese and sprinkle with paprika.
  15. Put the bowls under the broiler until the cheese is bubbly and browned.
  16. Serve with your favorite bread.
