Cream Cheese Frosted Pumpkin Cookies

Ingredients:

  • 1-3/4 cup shortening
  • 3-1/2 cups granulated sugar
  • 7 eggs
  • 1 large can pumpkin
  • 5 cups flour
  • 3-1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp ginger
  • frosting
  • 1 large package cream cheese softened
  • 1/2 stick butter
  • 4 tbsp finely chopped pecans

Directions:

  1. Combine all ingredients and beat with an electric mixer until well combined.
  2. Drop by teaspoon on ungreased cookie sheets and bake at 375 for 10 minutes.
  3. Combine cream cheese, butter and powdered sugar and mix untl smooth.
  4. Spread frosting over cooled cookies and garnish with chopped nuts.
