Ingredients:

Directions:

  1. Melt butter and add flour. Cook, stirring constantly, until you get a good caramel color.
  2. Add vegetables and saute until tender.
  3. Add cream of mushroom soup and cook for about 5 minutes. Add crawfish tails and cook for 5 more minutes.
  4. Add salt and pepper to taste and serve with crackers and chips.
  5. Note: This will be quite thick, but Charles notes the longer it cooks the more the water will be released and the mixture will become thinner.
