Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup oat bran
  • 3/4 tsp salt
  • 1/3 cup sugar
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 cup milk

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a bowl combine dry ingredients (flour - baking powder) and set aside.
  3. In another bowl beat together eggs, vegetable oil and milk and stir into dry ingredients.
  4. Stir in cranberries, walnuts and orange peel.
  5. Pour into muffin tins and bake for 20 minutes or until muffins are done.
