Crab Chowder With Snow Peas

Ingredients:

  • 2 cups clam juice
  • 2 1/2 cups water
  • 1/2 cup long grain rice
  • 1 tbsp minced gingerroot
  • 2 (4 oz) cans crabmeat
  • 2 cups snow peas , halved crosswise
  • 1 tbsp dry sherry
  • 1/2 cup milk
  • 2 cups torn sorrel
  • salt and pepper

Directions:

  1. Heat clam juice and water to boiling in a large saucepan. Stir in rice, scallions and gingerroot; reduce heat and simmer, covered, until the rice is tender; about 20 minutes.
  2. Stir in crabmeat and snow peas; simmer for 1 minute.
  3. Stir in sherry, milk and sorrel.
  4. Season to taste with salt and pepper.
