Ingredients:

  • 1 (7 oz) can tuna, drained
  • 1 carrot , medium
  • 1 stalk celery , medium
  • 1/3 cup mayonnaise
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • pepper , pinch
  • 3 cucumbers , medium

Directions:

  1. 3 cups of water and pinch of salt into a small saucepan. Bring to a boil. Add the elbow macaroni gradually and boil until tender-about 8 to 10 minutes Drain the macaroni and place in medium mixing bowl.
  2. Add tuna to macaroni.
  3. Grate carrot and chop celery into tiny pieces and add both to macaroni and tuna.
  4. Add mayonnaise, lemon juice, salt, and pepper and stir with fork.
  5. Peel cucumber and cut off ends. Cut each cucumber length wise. Scoop out seeds and watery flesh.
  6. Fill each cucumber with tuna mixture.
