Ingredients:

  • 8 oz cornmeal
  • 3 oz flour
  • 4 oz sugar
  • 1 tsp salt
  • 11 oz milk
  • 4 oz eggs , 2 large

Directions:

  1. Preheat oven to 350.
  2. Combine dry ingredients. Be sure to push baking powder through a strainer if it is pebbly.
  3. Separately, combine milk, eggs and oil and whisk until well combined.
  4. Add wet to dry and whisk to combine.
  5. Pour into pan(s) (if nonstick, coat with veggie oil). Bake for 30-50 minutes depending on the size of your pan(s). Toothpick or paring knife will come out clean when done.
