Corn Smoked Mozzarella Mashed Potatoes

Ingredients:

Directions:

  1. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  2. Add corn; sauté 5 minutes or until lightly browned. Cool.
  3. Place potato in a saucepan, and cover with water.
  4. Bring to a boil.
  5. Reduce heat; simmer 15 minutes or until tender.
  6. Drain and return potato to pan. Add milk, cheese, and butter; mash to desired consistency.
  7. Cook 2 minutes or until thoroughly heated, stirring constantly.
  8. Add corn, cilantro, and remaining ingredients, stirring to combine
