Directions:

  1. Mix and cook cornbread according to package directions.
  2. Saute onion and bell pepper until tender.
  3. Crumble cornbread and add rotel, mexicorn, chicken broth, and cheese to onion and pepper mixture.
  4. Place in a greased baking dish.
  5. Bake at 350 degrees until firm.
