Coffee Bean Cookies

Ingredients:

  • 1/2 cup shortening
  • 3/4 cup sugar
  • 3/4 cup packed light brown sugar
  • 2 eggs
  • 1 teasp. vanilla
  • 2 1/4 cups flour
  • 1 teasp. baking soda
  • 1 teasp, salt
  • 1/2 teasp. cinnamon
  • 3 ( 2 oz. ) packages of chocolate-covered coffee beans

Directions:

  1. Beat butter and shortening at medium speed of and electric mixer until creamy
  2. Gradually add sugars, beating well
  3. Add eggs and vanilla. beat well
  4. Combine the flour, baking soda, salt, and the cinnamon.
  5. Add to butter mixture. beating well
  6. Stir in the almonds, coffee beans and the candy
  7. Cover and chill dough if desired
  8. Drop dough by heaping teaspoonfuls onto an ungreased baking sheet
  9. Bake at 350' F for 10 to 11 minutes or until golden
  10. Cool on baking sheet for 1 minute
  11. Remove to a wire rack and cool completely
  12. Makes approx. 4 dozen
