Ingredients:

  • 2 eggs
  • 2 tbsp sugar
  • 1/2 cup desicated coconut
  • knob of butter

Directions:

  1. Whisk the eggs with the sugar until fluffy.
  2. Add the coconut.
  3. Melt the butter in a small frying pan and pour in the mixture.
  4. Fry in low heat, both sides.
  5. Serve immediately, sprinkled with the rest of the sugar, and for an extra treat, with some ice-cream.
