  1. Preheat the oven to 350. Lightly grease a large loaf pan (
  2. Mix together coconut oil and sugars. Mix well. Add eggs one at a time, beating well after each addition. Add vanilla extract.
  3. In a second bowl, Whisk together the flours, baking powder, baking soda and salt.
  4. In a third bowl, mash bananas (I use a potato masher or the mixer) and combine with the coconut milk.
  5. Gradually mix the dry ingredients with the wet ingredients, starting and ending with the dry ingredients. Mix until just combined. Stir in the pecans and coconut.
  6. Pour the batter in the prepared pan. Bake approx 65 mins or until toothpick inserted comes out clean.
  7. This can be made into muffins too.
