Ingredients:

Directions:

  1. Preheat oven to 400 degrees Fahrenheit. Line 2 baking sheets with aluminum foil, set aside.
  2. Cut baguette into thin, flat slices; about 1/4 of an inch thick. Arrange baguette slices on baking sheets, making sure not to overlap. Brush slices generously with olive oil. Top each slice with a small amount of parmesan, saving some for garnish. Bake baguette slices for 6 minutes, or until golden & crispy.
  3. Meanwhile, dice tomatoes & set aside in a small bowl. Chop basil into thin slices & add to bowl. Mix together, adding salt & freshly ground pepper to taste.
  4. Once baguette slices are done, spoon a small amount of tomato mixture onto each, then top with freshly shaved parmesan. Arrange on a platter & serve at room temperature.
