Ingredients:

Directions:

  1. Start by washing clams throughly.
  2. Soak them in water until it is time for use.
  3. In a wok heat oil, and stir fry the ginger-root and garlic until fragrant.
  4. Add the black beans and cook for 1 minute.
  5. Turn heat to high, drain the clams and add to the wok.
  6. Add the Shaoxing rice wine, and stir fry (mixing) for about 2 minutes.
  7. Cover and cook for about 3 minutes.
  8. Add the scallions.
  9. Add salt if needed.
  10. Serve immediately.
