Citrus Tomato Marmalade

Ingredients:

  • 3 quarts peeled ripe tomatoes (about 5 1/2 lbs.)
  • 4 cinnamon sticks
  • 1 tbsp whole cloves
  • 6 cups sugar
  • 1 tsp salt

Directions:

  1. Cut tomatoes into small pieces, drain.
  2. Slice oranges and lemons very thin; quarter the slices.
  3. Tie cinnamon sticks and cloves in cheesecloth bag.
  4. Place tomatoes in large kettle, add sugar and salt and stir until dissolved.
  5. Add oranges, lemons and spice bag.
  6. Boil mixture rapidly, stirring constantly until thick (about 50 minutes).
  7. Remove from heat; skim foam.
  8. Pour into 1/2 pint jars and seal.
  9. Process 5 minutes in boiling water bath.
  10. Recipe can be halved.
