Ingredients:

Directions:

  1. Slice chicken breasts into thin sections.
  2. They will look like fish fillets when sliced properly.
  3. You should get 2-3 sections from each breast half.
  4. Cook chicken in skillet sprayed with pam or equivalent until chicken is cooked thoroughly and slightly browned.
  5. Set aside somewhere it will stay warm.
  6. Saute scallions and mushrooms until tender.
  7. Set aside.
  8. In microwave-safe bowl, combine cornstarch and chicken broth.
  9. Microwave on high for 1 minute.
  10. Stir.
  11. Microwave on high for 1 additional minute.
  12. Stir.
  13. Add lemon juice, ranch dressing, and dill to broth mixture.
  14. Stir until well mixed and smooth.
  15. Top chicken with mushrooms and scallions.
  16. Serve sauce over chicken.
