Cinnamon Sugar Muffins

Ingredients:

  • 1-3/4 cup flour
  • 1-1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 egg
  • 3/4 cup milk
  • 2 tbsp raisins (optional)
  • for the cinnamon sugar topping
  • 2 tbsp cinnamon sugar (75% sugar, 25% cinnamon)

Directions:

  1. 1. Preheat the oven to 350º. See Photo
  2. 2. In a separate bowl whisk together the flour, baking powder and salt, nutmeg See Photo
  3. 3. In another large bowl, combine oil, sugar, egg and milk. Use a mixer if you have and mix together well See Photo
  4. 4. Add dry ingredients and hand stir with a spoon See Photo. Do not use mixer.
  5. 5. Coat your muffin pan with olive oil using a food brush See Photo
  6. 6. Divide the batter evenly among the 12 cups in the pan See Photo
  7. (For easier pouring you might want to use a cupcake batter dispenser)
  8. 7. Bake at 350 degrees for 20 minutes.
  9. 8. Run a knife around the sides of the muffin and use the knife to gently pry the muffins out of the pan while still hot. Do wait until it cools. Use oven mitts.
  10. 9. Melt the butter in a bowl on low heat while the muffins are baking
  11. 10. Using a pastry brush to coat the top with butter See Photo
  12. 11. Liberally sprinkle the Ceylon Cinnamon on top See Photo
  13. 1. Wait to cool and serve
