Cinnamon Chip Oatmeal Cookies

Ingredients:

  • 1 cup butter or 1 cup margarine, softened
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 1/2 cups quick-cooking oats
  • 1 (10 oz) package hershey's cinnamon bark
  • 3/4 cup raisins

Directions:

  1. Preheat oven to 350°.
  2. In large mixing bowl cream butter, granulated sugar and brown sugar.
  3. Beat in eggs and vanilla.
  4. Add flour and baking soda, mixing well.
  5. Mix in oatmeal, cinnamon chips and raisins (batter will be heavy).
  6. Drop by heaping teaspoonful onto ungreased cookie sheet and bake for 10-12 minutes or until they look golden around edges.
  7. Let cool for about 1 minute and then remove to wire rack to finish cooling.
