Christmas Oatmeal Cranberry Cookies

Ingredients:

  • 2/3 cup packed brown sugar
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 cups quick oats
  • 1 cup flour
  • 1 cup shortening

Directions:

  1. Combine all ingredients EXCEPT oats, flour, and cranberries in mixer. Mix well.
  2. Add flour to form dough. Fold in oats and cranberries.
  3. Drop 1 -1 1/2 balls of dough on ungreased cookie sheet 2 apart.
  4. Bake 9-11 minutes at 350 degrees, or until lightly brown around edges.
  5. Do NOT over bake. Cookie will be slighly undercooked and will firm while cooling. Necessary if you want a soft and chewy cookie.
