Ingredients:

Directions:

  1. Heat oil in a large pot. saute the 1/3 cup of onions and garlic over medium heat, about 1 minute
  2. Carefully add stock,pumpkin,chorizo and potaroes. stir in oregano and cumin. bring to a boil,then turn down heat to a simmer. simmer for 45 minutes, or until potatoes are soft.
  3. Remove from heat and let cool down for 10 minutes.
  4. Stir in cream and serve immediately topped with a Tbs. each, of chopped onions and cilantro.
