Chorizo And Tomato Frittata

Ingredients:

  • 6 egg
  • 1/4 cupwhipped heavy cream
  • 1/4 cupalmond milk original
  • 3/4 cupgreen olives
  • 4 ozgoat cheese
  • 5 stalkfresh green onions

Directions:

  1. Preheat oven to 350. Spray a square casserole with non-stick cooking spray.
  2. Whisk eggs and cream together.
  3. Thinly slice the sausage. Thickly slice the tomatoes. Dice the green onion.
  4. Cook chorizo in a small frying pan until crisp. Drain well.
  5. Toss the tomato, onion, sausage, olives and cheese into the casserole. Pour the egg mixture over top.
  6. Bake uncovered about 30 minutes or until frittata is set.
