  1. 1)Preheat oven to 350º. Spray the 9 x 5-inch loaf pan with non-stick vegetable spray. To prepare crumb mixture, in a small bowl, combine sugar and cocoa. Cut in margarine until coarse crumbs form. Reserve 2 Tbs.
  2. 2)In a large bowl, combine flour, baking powder, and baking soda. Mix well. In a medium bowl, combine buttermilk, sugar, applesauce, margarine, egg and egg white. Mix well. Add egg mixture to flour mixture, stirring until just combined. Stir in zucchini and walnuts.
  3. 3)Pour half of batter into the prepared pan. Sprinkle crumb mixture over batter. Pour remaining batter on top. Sprinkle with the reserved crumb mixture.
  4. 4)Bake until a toothpick inserted in the center comes out clean, about 55 minutes. Turn bread out onto a wire rack and cool.
