Chocolate Orange Cake

Ingredients:

  • 1 1/2 cups unbleached flour
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups sugar
  • 1 tsp salt
  • 1/2 cup cocoa
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 1/2 cups water
  • 1/2 cup orange juice
  • for orange icing
  • 2 tsp orange juice (plus extra as needed)
  • for chocolate icing
  • 1 tbsp cocoa
  • 2 tsp orange juice (plus extra as needed)

Directions:

  1. Spray a bundt cake pan with non stick spray and dust it lightly with unsweetened cocoa. Preheat oven to 350 F.
  2. Combine flours, sugar, baking soda, salt, cocoa, and cinnamin in large mixing bowl. Add yogurt, vanilla, vinegar, water, and orange juice. Beat by hand or with a mixer on low speed just until well combined, about 1-2 minutes. Stir in grated orange peel and pour into prepared pan.
  3. Bake for 30-40 minutes, or until tootpick inserted into middle comes out clean. Cool for 10 minutes before inverting onto serving plate to cool completely.
  4. Mix icings in separate bowls, adding orange juice to each to make a drizzling consistency.
  5. Drizzle chocolate icing, wait a few minutes to set, then drizzle orange icing.
  6. Cake without icing is ~170 calories.
