Ingredients:

Directions:

  1. COOKIES:
  2. Preheat oven to 350 degrees F.
  3. Melt over hot (not boiling) water, 1 cup of mint chocolate chips; stir until smooth.
  4. Set aside.
  5. In a large bowl, combine butter, confectioners' sugar, and egg yolk.
  6. Beat until creamy.
  7. Add melted chips and flour; beat until well blended.
  8. Drop by heaping teaspoonfuls onto ungreased cookie sheets.
  9. Bake at 350 degrees F. for 8 to 10 minutes.
  10. Allow to stand for 3 minutes before removing from cookie sheets.
  11. Cool completely on wire racks.
  12. GLAZE:
  13. Combine over hot (not boiling) water the remaining 1/2 cup of mint-chocolate chips and vegetable shortening.
  14. Stir until chips are melted and mixture is smooth.
  15. Drizzle each cookie with 1/2 t of the glaze; sprinkle with almonds.
  16. Chill until set.
  17. Stor in airtight container in the refrigerator.
