Chocolate Lava Cake

Ingredients:

  • 1/2 cup butter
  • 1 tbsp flour
  • 1/4 cup flour
  • 1/2 cup sugar
  • 3 large eggs
  • 1 pinch salt

Directions:

  1. Preheat oven to 425 degrees.
  2. Brush 4 7oz ramekins with melted butter.
  3. Mix the cocoa powder and 1 tbsp flour in small bowl. Dust ramekins with this mixture and tap out the excess.
  4. Melt butter and dark chocolate over very low heat, stirring occasionally.
  5. While waiting for the chocolate to cool use an electric mixer over medium high speed to beat sugar, eggs and salt for 3 minutes.
  6. Fold in melted chocolate, making sure no streaks remain.
  7. Mix in 1/4 cup flour.
  8. Divide evenly into ramekins.
  9. Place ramekins on baking sheet.
  10. Bake for 16 minutes.
  11. Let cool for 10 minutes.
  12. Right before serving take a butter knife and go around edges of the ramekins to loosen cakes.
  13. Invert onto plates and serve.
