  1. Melt butter and chocolate together. Beat eggs well; beat in sugar and butter/chocolate mixture. Stir in sour milk and vanilla.
  2. Blend salt and leavening into 6 cups of flour; beat in until smooth. Use more of the flour, if needed, to make a soft dough.
  3. Turn part of dough onto generously floured, cloth-covered board. Turn to lightly cover with flour. Roll gently 1/3 thick.
  4. Place cooking oil (3 to 4 deep) for deep fat frying in a heavy kettle or deep fat fryer. Heat to 370°F to 380°F (a cube of bread browns in fat in 60 seconds).
  5. Cut dough with floured sharp doughnut cutter. Take board close to kettle to transfer. Lift with spatula; slide quickly into hot fat. Fry as many at a time as can be turned easily, probably 4 or 5 at a time. Turn doughnuts as they rise to surface. Fry 2 to 3 minutes total. Lift from fat with long fork. Do not prick. Drain on absorbent paper in warm place.
  6. Excess dough from stamping out the doughnuts may be gathered up and re-rolled to get as many as you can out of the dough. Or you may choose to just fry the holes .
  7. Serve plain, sugared or glazed.
  8. *VARIATIONS:
  9. ●To make Sweet Milk Doughnuts, substitute regular milk for buttermilk; use 4 tsp baking powder and omit baking soda.
  10. ●To sugar doughnuts, just before serving shake doughnuts one at a time in a paper bag with a little confectioner sugar, granulated sugar or mixture of cinnamon and sugar.
  11. ●To glaze doughnuts, add 1/3 cup boiling water gradually to 1 cup confectioner sugar. Mix thoroughly. Dip warm doughnuts into the warm glaze.
  12. ●To chocolate glaze doughnuts, add 1 square (1 oz) melted unsweetened chocolate and 1/2 tsp vanilla to 2 1/2 cups confectioner sugar. Mix thoroughly. Slowly stir in milk, mixing until smooth and of glaze consistency. Dip warm doughnuts into the warm glaze.
  13. ●To coat with nuts and sugar, dip warm doughnuts into warm glaze, then into mixture of 1/2 cup finely chopped nuts, 1/2 cup sugar and 1 tsp cinnamon.
