Ingredients:

  • 1 -1 1/2 cup caster sugar
  • 1/4 tsp baking powder
  • 1 large egg
  • 1/4 tsp salt
  • 1 1/2 cups flour
  • nuts (they should be finely ground and roasted beforehand, the oils in them would weigh the cookie down) (optional)

Directions:

  1. Cream the butter and sugar until light and fluffy; I added each ingredient into this mixture and blended well; i added the flour by the 1/2 cup because i wanted to make sure it was well blended. the mix should be light and fluffy when done. I chilled for about an hour; then preheated my oven to 350 degrees.
  2. Drop by teaspoon onto baking sheet or parchment paper, bake for 17 minutes. cool for 5 minutes.
