Chocolate Coconut Pie Crust

Ingredients:

  • 2 tbsp. butter
  • 2 tbsp. hot milk or water
  • 2/3 cup sifted confectioners' sugar

Directions:

  1. Melt chocolate and the butter in top of double boiler, stirring until blended
  2. Combined milk and sugar
  3. Add to chocolate mixture stirring well
  4. Add coconut and mix well
  5. Spread mixture on the bottom and sides of a greased 9 inch pie pan
  6. Chill until firm....DO NOT freeze
  7. ............................................................................................................................
  8. To serve with a Chiffon or Cream Pie Filling:
  9. Pour filling into a chilled crust and chill again until filling is firm.
  10. Remove from refrigerator and let stand 5 to 10 minutes before cutting
  11. ............................................................................................................................
  12. To serve with an Ice Cream Filling:
  13. Let chilled crust stand at room temperature for 5 to 10 minutes then fill with ice cream and serve immediately
  14. ............................................................................................................................
  15. Suggested ice cream: mint chocolate chip
