Chocolate Coconut Bars

Ingredients:

  • 2/3 cup sugar
  • 3/4 cup shortening
  • 1/4 cup cocoa
  • 1 egg
  • 1 tbsp water
  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 3 tbsp flour

Directions:

  1. Heat oven to 350 degrees.
  2. Grease 13x9x2 inch pan.
  3. For cookie base combine sugar, shortening, cocoa, egg and water in a large bowl.
  4. Beat until well blended.
  5. Combine 1 1/4 cups flour and salt.
  6. Add gradually to the creamed mixture.
  7. Stir until just blended.
  8. Press into bottom of greased pan.
  9. Bake at 350 for 10 minutes.
  10. For filling combine condensed milk, 3 Tbsp flour and vanilla.
  11. Stir with a spoon until just blended.
  12. Stir in chocolate chips, walnuts and coconut.
  13. Spoon over baked cookie base.
  14. Spread carefully to cover.
  15. Return to oven.
  16. Bake another 20 minutes at 350.
  17. Cool.
  18. Cut into bars 1 1/2x1 1/2 inches.
