Ingredients:

Directions:

  1. ~Chocolate Mousse~
  2. Melt the chocolate,stir occasionally,until melted.
  3. Set aside to cool.
  4. Beat egg whites until soft peaks form.
  5. Scrape the chocolate into a bowl.
  6. Carefully stir in the dissolved gelatin into the melted chocolate.
  7. Then alternately fold in the whipped cream and the egg whites until well combined.
  8. Set aside until ready to use.
  9. ~ Cointreau~
  10. Beat the egg yolks and sugar until pale and creamy.
  11. Bring half the orange juice to a boil,remove from heat,and add geltain.
  12. Stir until completely dissolved.
  13. Stir in the remaining orange juice and liqueur.
  14. Gradually whisk the gelatin mixture into the egg yolks and sugar.
  15. Fold in the cream.
  16. Spoon Chocolate Mousse into piping bag fitted with a star nozzle.
  17. Set out 8 long stemmed glasses on a tray.
  18. Place some of the orange segments in the base of each glass.
  19. Pipe in generous rosettes of the chocolate mousse.
  20. Top with more orange segments and more chocolate mousse.
  21. Finish with a few more segment and a large dollop of the Cointreau mousse.
  22. Decorate with grated chocolate.
  23. Chill in the refrigerator for 30 minutes before serving
