Chocolate-Almond Energy Bars

Ingredients:

  • 1 bar 100% cocoa chocolate baking bar (4oz)
  • 3 cup oats
  • 1/2 tsp sea salt
  • 2 cup slivered almonds

Directions:

  1. Pre-heat oven to 350F. Spread oats on a baking
  2. Sheet and bake until the oats are lightly toasted,
  3. About 10 minutes.
  4. Transfer to a large bowl. Add the almonds and
  5. Coconut; toss to combine.
  6. Combine chocolate bar, almond butter, honey,
  7. Coconut oil, vanilla and sea salt in a small
  8. Saucepan. Heat over medium-low, stirring
  9. Frequently, until the mixture bubbles lightly, 2 to 5
  10. Minutes.
  11. Immediately pour the chocolate/almond butter
  12. Mixture over the dry ingredients and mix with
  13. A spoon or spatula until no dry spots remain.
  14. Transfer to a pan with side rims and press the
  15. Mixture down firmly to make an even layer.
  16. Refrigerate until firm and cut into bars. Enjoy!
  17. (Keep stored in the fridge.
  18. Serving size: Divide into 12 rows, each made of 8 pieces.
