Chipotle Grilled Shrimp

Ingredients:

Directions:

  1. In large bowl, combine chipotles, adobo, the juice from 1 1/2 limes, the zest from 1 lime, garlic, honey and hot sauce and mix well.
  2. Add shrimp and peppers and toss to coat completely.
  3. Let rest in marinade about 15 minutes, but no more than 20 minutes.
  4. Grill over high heat for just a couple minutes, until cooked through and shrimp is curling. (you can skewer these or do them in a basket, or even in a cast iron pan on the grill, the broiler, or stove top)
  5. Add a lil salt and pepper to the finished skewers(I used flake sea salt and coarsely ground pepper)
  6. Serve with fresh cilantro and lime wedges.
