Chipotle Copycat Recipe- Cilantro Lime Rice

Ingredients:

  • 2 cups long grain white rice
  • 3 cups water
  • 1/4 cup olive oil (or soybean or canola)
  • 1 lime , juice from
  • 1/2 tsp salt

Directions:

  1. Rinse rice well until water runs clear.
  2. Combine rice, water and bay leaf in a pot, cover it and bring it to a boil.
  3. Reduce heat and simmer about 18 minutes.
  4. Fluff with a fork and stir in cilantro.
  5. Add oil, lime juice and salt together, stir well.
  6. Taste and adjust- might need more lime or salt.
