Chilled Beet Soup

Ingredients:

  • 1 cup. of cooked beets
  • 1 cup. of crushed ice
  • 1 1/2 cup. of sour cream
  • 2 tbsp. of lemon juice
  • 1/2 cup. of small onion

Directions:

  1. First place the sour cream, lemon juice, onion and the beets into a
  2. Food processor.
  3. Puree for a couple of minutes.
  4. Finally, add the ice and chill.
  5. Just before serving, add a dollop of sour cream.
