  1. In a large soup pot, heat the oil over medium heat.
  2. Saute the onion and pepper until until begin to become translucent, about 5 minutes.
  3. Add the mushrooms and cook for about 2 minutes.
  4. Add the remaining ingredients and simmer over very low heat for 3-5 hours.
  5. Enjoy with your favorite accompaniment! ex. rice, crackers, corn chips, peanut butter sandwich, elbow macaroni, etc.
